Whether you’re looking for a gluten-free pancake or just want to change your pancakes up a little this is a must-try recipe. It requires very little effort, no baking experience is necessary, and you most likely have all of the ingredients in your pantry/fridge.
These pancakes are healthy and filling! That is the power of oats and yogurt. Aside from the deliciousness of these pancakes, there is an aroma while cooking them that rivals the smell of bacon. We’re not joking, the aroma may even wake up your teenager before noon!
The recipe for these pancakes can easily be scaled, double, triple, or as much as you feel necessary. The recipe below yields about 4 - 5, 6-inch pancakes. If you would like to add a twist to these pancakes we recommend you use flavored yogurts. Cottage cheese is a delicious alternative to the yogurt … We made these pancakes with a vanilla flavored greek yogurt. The vanilla added an incredible aroma and flavor! And since we used greek yogurt our pancakes were packed with protein. If you don’t like the funky taste of greek yogurt don’t worry because you can use any yogurt. FYI the funky greek yogurt flavor was not present in our pancakes. Vanilla, blueberry, or strawberry yogurt would be a great way to add some extra deliciousness to these pancakes.
