No Bake Chocolate Peanut Butter Energy Bites (Gluten Free)

It's snack time! And you're having trouble finding healthy snacks for the kids in between their Zoom classes. Or, your busy day has completely worn you out and you're looking for some healthy energy... this No Bake Chocolate Peanut Butter Energy Bites (Gluten Free) recipe is perfect for all of the above! Michael frequently eats a few energy bites before going to his Hamilton College Football practices or a workout.

This recipe is meant to encourage you to be creative and add all your favorite snack flavors! Instead of chocolate chips, try adding M & M's or Reese's Pieces. You could also substitute the chocolate for dried fruit such as, cranberries. Or in addition to the chocolate, add cranberries and shredded coconut. If you would prefer not to have yet another snack with peanut butter, then try using almond butter. Be creative! And don't forget to show us what you come up with :):):)

Refrigeration Time: 1 hour

 

Ingredients:

1 & 1/4 cup Rolled Oats (Old Fashion Oats)
1/2 cup Peanut Butter
1/3 cup Cedarvale Maple Syrup (We used our Amber Maple Syrup)
1/2 cup Chocolate Chips (Or your favorite chocolate, dried fruits, etc.)
 
Directions:
  1. In a medium size mixing bowl, add all of your ingredients and stir until the ingredients are fully mixed together.
  2. Place in the refrigerator for 1 hour.  
  3. Lastly, take your ingredients out of the refrigerator and using your hands roll the energy bites into small balls. The energy bites can be placed back in the refrigerator if you desire but it is not necessary.
